Blueberry scramble
When people think about scrambled eggs, their thoughts go to a savory taste. I, mistakenly, made a sweet scrambled egg. I was really attempting to making pancakes with just eggs and bananas (I don't know what I was thinking). I added more ingredients and made sweet scrambled eggs and I enjoyed it!
Blueberry Scramble
Serves: 2
Ingredients:
- 2 very ripe bananas, mashed
- 1/4 cup blueberries
- 1 tsp vanilla extract
- 1 teaspoon cinnamon
- pinch of nutmeg
- 3 eggs
- 1 egg white
- 1 teaspoon coconut oil
Directions:
- Mix all ingredients, except oil.
- Heat coconut oil on medium heat.
- Add the banana/egg mixture into the pan and make like scrambled eggs.
- Enjoy this different scrambled egg experience with a cup of tea!
