Blueberry scramble

When people think about scrambled eggs, their thoughts go to a savory taste. I, mistakenly, made a sweet scrambled egg. I was really attempting to making pancakes with just eggs and bananas (I don't know what I was thinking). I added more ingredients and made sweet scrambled eggs and I enjoyed it!
Blueberry Scramble
Serves: 2
Ingredients:
  • 2 very ripe bananas, mashed
  • 1/4 cup blueberries
  • 1 tsp vanilla extract
  • 1 teaspoon cinnamon
  • pinch of nutmeg
  • 3 eggs
  • 1 egg white
  • 1 teaspoon coconut oil
Directions:
  1. Mix all ingredients, except oil.
  2. Heat coconut oil on medium heat.
  3. Add the banana/egg mixture into the pan and make like scrambled eggs.
  4. Enjoy this different scrambled egg experience with a cup of tea!
