No-mayo coleslaw


Healthy Coleslaw

Ingredients:
  • 1/2 head of green cabbage, thinly sliced
  • 1/2 cup carrots, thinly sliced
  • 1 cup red cabbage, thinly sliced
  • 1 tsp honey
  • 2 tsp dijion mustard 
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste
Directions:
  1. In a small bowl, mix honey, mustard, apple cider vinegar, and olive oil. Set aside.
  2. In a large bow, mix the green cabbage, red cabbage, and carrots.
  3. Add the vinegar mixture into the cabbage mixture and combine. Add salt and pepper to taste.
  4. Refrigerate until ready to serve. (the longer it sits, the tastier it will be!)
  5. Enjoy!
