Taco Tuesday

Labor Day may say that summer is over, but summer is not over until September 22! The weather still says summer when you step outside. Plus summer produce is still going strong! Did you know corn grows until the first frost? People often forget about corn once labor day hits... don't be that person!

I know everyone is busy with kids back at school and schedules changing. Heat up the grill and make these delicious chicken tacos, which are so quick and easy to make!


Grilled Chicken Tacos with 
Grilled Corn and Avocado Salsa
 
Serves: 2
Total time: 30-40 minutes
Ingredients:
  • 3- 4oz chicken breasts
  • 4 tbsp low sodium taco seasoning
  • 2 tbsp chili lime seasoning (I used Trader Joe's)
  • 1/4 cup water
  • 1/2 lime, juice
  • 3 corn on the cobs
  • 1/2 tomato, chopped
  • 1 avocado, cubed
  • 2 tbsp green onion
  • 1/4 jalapeno, sliced
  • 1/2 tbsp fresh cilantro 
  • S&P
  • 4 soft shell tortillas
  • Optional: 
    • 1/2 red pepper
    • 1/2 green pepper
    • 1/2 onion 
    • 2 tbsp olive oil
    • S&P
Directions:
  1. Mix taco seasoning and chili lime seasoning into water. Marinate chicken in mixture for 5 minutes (the longer the better, but sometimes we just don't have time... can I get an AMEN!).
  2. Heat up grill to medium heat. 
  3. Take a large piece of foil, fold over the sides to create a foil boil. Add chicken and marinade. 
  4. Grill chicken within the foil pack for 25-30 minutes, until the inside temp hits 165 degrees F.
  5. (optional) Mix peppers and onions with S&P and olive oil. Grill for 15 minutes, flipping for equal cooking and to prevent burning.
  6. While chicken is grilling, make salsa. Grill corn on the cob for 10 minutes, rotating to prevent burning.  
  7. Once corn is grilled, let it chill, then remove the kernels from the cob. 
  8. In a medium bowl, combine grilled corn, avocado, green onion, cilantro, jalapeno, S&P, and tomato. Squeeze lime juice over mixture.
  9. Within the last 5 minutes, add tortilla shell on top shelf of grill to create a grilled, hard shell (see pic).
  10. Once chicken is cooked, cut in slices, add to grilled tortilla shells, top with grilled peppers and onion (not pictured), and finish with grilled corn avocado salsa. 
  11. Enjoy the remainder of summer with this summer filled taco!
