Healthy Buffalo Chicken Dip

Serves: 10-15 people (maybe more)
Total time: 25-30 min
Ingredients:
  • 3 cups shredded chicken (I used rotisserie chicken or you can use can chicken)
  • 1-1/2 cups 2% or 0% greek yogurt
  • 1 cup shredded cheddar, save some for the top
  • 1/2 cup shredded part skim mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 cup Franks Red Hot Buffalo Sauce (depends on desired hotness)
  • dippers: celery, carrots, whole-grain chips
Directions:
  1. Preheat oven to 325 degrees F.
  2. Shred rotisserie chicken in skinny pieces (unless using the can chicken)
  3. Mix all ingredients together, save some cheddar cheese for the top. Pour in 9 inch pie dish or 9x9 baking dish. Sprinkle the rest of the cheddar cheese on top.
  4. Bake for 15-20 minutes (until brown on top).
  5. Bring to a party and let everyone devour it! 
Let me just tell you, I put this dip out and came back a few minutes later to it ALL gone! I am so happy people can enjoy buffalo chicken dip without the high fat cream cheese, bleu cheese, ranch, or sour cream.  Greek yogurt can replace those high fat products without sacrificing the taste! To make it a bit healthier, eat it with a celery stick, whole-grain chips, carrots, cucumbers, etc.
