Quinoa (KEEN-wah) Mediterranean Salad
Quinoa is fun to say, delicious to eat, and nutritious!
* About Quinoa*
-High protein grain
-A complete protein
-High in lysine (amino acid for tissue growth and repair)
-Good source of iron, magnesium, manganese, phosphorous, and copper
-Gluten free
-Very low-glycemic-index
-Fiber rich
-Mild, nutty flavor
-Rinse before cooking
Mediterranean Quinoa Salad
Ingredients:
- 1 cup cooked quinoa
- 1/4 cup cucumber, sliced
- 1/8 of a red pepper, chopped
- 6 grape tomatoes, halved
- few slices of red onion
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- Pinch dried basil
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/2 tsp balsamic vinegar
Directions:
- Cook quinoa according to package.
- Combine first 5 ingredients in medium bowl.
- In a small bowl combine the rest of the ingredients.
- Combine all ingredients and mix.
- Enjoy the touch of summer with this yummy salad!
