Quinoa (KEEN-wah) Mediterranean Salad

Quinoa is fun to say, delicious to eat, and nutritious!
* About Quinoa*
-High protein grain 
-A complete protein
-High in lysine (amino acid for tissue growth and repair)
-Good source of iron, magnesium, manganese, phosphorous, and copper
-Gluten free
-Very low-glycemic-index
-Fiber rich
-Mild, nutty flavor
-Rinse before cooking


Mediterranean Quinoa Salad
Ingredients:
  • 1 cup cooked quinoa
  • 1/4 cup cucumber, sliced
  • 1/8 of a red pepper, chopped
  • 6 grape tomatoes, halved
  • few slices of red onion
  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • Pinch dried basil
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/2 tsp balsamic vinegar 
Directions:
  1. Cook quinoa according to package.
  2. Combine first 5 ingredients in medium bowl.
  3. In a small bowl combine the rest of the ingredients.
  4. Combine all ingredients and mix.
  5. Enjoy the touch of summer with this yummy salad!
