Stuffed avocado
Yesterday I had a gum implant, it is where they take skin for the roof of your mouth and stitch it to the gums. It was a bit painful, but they numb the areas. They gave me a retainer to cover the roof of my mouth (so I talk a little funny) and I have to eat soft foods for a couple days. This has been an adventure. Some of the foods I have been eating is: smoothies, mashed sweet potatoes, soup, scrambled eggs,and this avocado mixture I just put together. I really wanted multi-grain chips with it, but it is too hard to eat. This concoction was all soft, small foods that were easy to eat.
Stuffed avocado
Serves: 1
Time: 15 min
Ingredients:
- half of an avocado
- 2 Tbsp cooked quinoa (could use rice)
- 2 Tbsp cooked ground turkey (or ground turkey or beans; I had the pork in the fridge already)
- 2 Tbsp of Mango salsa (or any salsa)
- Sprinkle of chili powder (or taco seasoning)
- Sprinkle of garlic powder
- Sprinkle of onion powder
Directions:
- Preheat oven to 325 degrees F.
- Slice avocado in half, take out the inside and place in a small bowl.
- Add quinoa, ground pork, chili powder, garlic powder, and onion powder into the small bowl of avocado and mix till combined, not like guacamole.
- Place the mixture back into avocado skin.
- Bake the avocado for 10 minutes.
- Add salsa to the top.
- Enjoy and make sure to salsa dance after eating it!
*Fun facts about avocado*
-A ripe avocado is dark in color and soft to touch
-To cut: slice in half, in a circle around the avocado, take out the seed, scope with a spoon
-To keep it from browning: Leave the seed in it or add acid like lime or lemon juice
-Use it to replace mayo in salads like tuna, chicken, pasta, etc.
-Add it on burgers, sandwiches, tacos, toast, and salads
-Provides fiber, potassium, Vit E, Vit C, B Vitamins, folic acid, magnesium
-A good fat that helps absorb fat-soluble nutrients like: Vit A,D,E, K, Beta-carotene, and lutein
-A monounsaturated fat: can help reduce cholesterol levels and lower your risk of heart disease and stroke. You get the benefits when it replaces sat. and trans fats
-Since it is a fat, don't overdo it!!
