Sweet Potato Casserole
I hope you have all your Christmas shopping done and are getting ready for the big day! I am sure you have many holiday dinners/ parties to attend and have trouble finding a healthier option to provide for everyone. If you are like me, I want to make something really good, but also healthy. After looking over the FitSugar recipe, I knew I couldn't go wrong with this sweet potato casserole. I tweaked their recipe to make it a little different, but it is still very good and addicting! Try it out for a Christmas dinner side dish!
Sweet Potato Casserole
Serves: 12
Time: 1 hr and 20 min
Ingredients:
- 10 Medium sweet potatoes, cut in thirds
- 2/3 cup honey
- 2 large eggs
- Splash of orange juice
- 2 teaspoon cinnamon, separated
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- 3/4 teaspoon salt
- 2 tablespoon packed brown sugar
- Optional toppings: 2/3 cup chopped pecan or marshmallows on top
Directions:
- Preheat oven to 350 degrees F.
- Boil water in a large pot, add sweet potatoes to water. Boil until soft, about 25-30 minutes.
- When sweet potatoes are ready, transfer to a mixing bowl and let them cool. When comfortable to touch, peel the skin of the sweet potatoes. (You can peel the skin off easier than doing it before boiling.)
- Add the honey, eggs, orange juice, 1 teaspoon of cinnamon, all the nutmeg, all the ginger, and salt. Mix the sweet potato mixture until it looks mashed and transfer to a casserole dish.
- Mix brown sugar, cinnamon, and optional toppings together, sprinkle over sweet potatoes.
- Bake until brown around the edges, 40-45 minutes.
