Turkey Chili with Sweet Potatoes
You can never go wrong with making a pot of chili, turkey chili that is. It is the best to make a large batch and freeze for another day! Dinner tonight was turkey chili with sweet potatoes.
Turkey Chili with Sweet Potatoes
Serves: 5
Ingredients:
- 1 lb Ground turkey
- 1-1/2 tablespoons olive oil
- 1 large cooking onion, chopped
- 2 garlic cloves, minced
- 1/2 red pepper, chopped
- 1 large sweet potato, chopped
- 1 can (15 oz)of kidney beans
- 1 can (15 oz) of black beans
- 1 can (20 oz) of diced tomatoes
- 3 tablespoons chili powder
- 1 teaspoon red pepper flakes
- 2 teaspoons onion powder
- 1 teaspoon ground pepper
- Toppings: greek yogurt, avocado, "Food Should Taste Good" multigrain chips
Directions:
- In crock pot heat oil over medium heat.
- Add turkey until brown.
- Add all remaining ingredients, except toppings. Mix well.
- Cover and cook 8 hours low or 4 hours high.
- Top with your favorite additions, serve, and enjoy!
For dessert I treated myself to half of a vanilla cupcake with peppermint buttercream icing that my friend Demi made, it was so yummy! The other one was a chocolate cupcake with maraschino cherry buttercream icing. I wish I had her talent of cooking and baking. For example: one day she made pumpkin pie ravioli with pumpkin pie filling wrapped in her homemade pasta with a cream sauce. Another day she made pancakes shaped like Mickey Mouse. One day you will be able to enjoy one of her cupcakes at her soon-to-be cupcake shop or truck!
