Blueberry steel cut oats

It is freezing outside! There is snow on the ground and the wind sounds powerful outside! This is the perfect day to eat oatmeal or steel cut oats to warm up your body, while getting in a healthy dose of whole grains and nutrients. There are many different things you can add into oatmeal, but I find it very easy and fast to buy frozen blueberries and use them. Blueberries are not in season, so they are expensive to buy fresh. Buying frozen vegetables and fruit is a great way to get those nutrients in you during the off-season of produce. Make sure when you buy the frozen produce that they did not add any sweeteners or anything else. You just want the ingredients to say only one ingredient, for example: blueberries. 


Blueberry Steel Cut Oats
Serves: 1
Time: 8 min
Ingredients:
  • 1/4 cup quick cook steel cut oats (I used Trader Joe's)
  • 3/4 cup water
  • 1/4 cup blueberries (I used frozen, but can use fresh)
  • 1/4 teaspoon of vanilla extract
  • 1 tablespoon of cinnamon
  • 1 tablespoon milk of choice (I used unsweetened soy)
  • 1/8 cup Kashi Go Lean Crunch cereal (granola or nuts can be used)
Directions:
  1. Boil the water.
  2. Add the oats, cinnamon, vanilla, and blueberries, mix together.
  3. Reduce heat, cover, and cook for 5-7 min, stir occasionally.
  4. Remove from heat, add milk, and let it sit for 1 minute before serving.
  5. Top with Kashi cereal, nuts, or granola (I like the crunch). 
  6. Enjoy this nutritious breakfast!
