TACOS!!!
Mexican food is so yummy and can be made so healthy!
-Skip the sour cream and have avocado instead.
-Use whole wheat or corn tortillas rather than white flour tortillas.
-When it comes to chips, choose whole grain and low sodium or make your own by cutting up tortillas, than drizzle olive oil, sprinkle a little salt, and bake them till they get a golden color (5-10 min).
-Add a little spice to your taco for an extra metabolism boost.
-Skip the refined beans and add black beans.
-Add more veggies and less cheese.
-Instead of eating 3 tacos, eat two tacos and a mexican salad with salsa as the dressing!
-Buy low sodium taco seasoning or make your own:
Homemade Taco Seasoning
-1/2 cup chili powder
-1/4 cup onion powder
-1/8 cup ground cumin
-1 tbs garlic powder
-1 tbs paprika
-1 tbs salt (or less)
-Sprinkle of red pepper
Tacos
Serves: 3Ingredients:
- 1/2 pound ground turkey, chicken, or lean beef (I did half ground chicken and ground turkey)
- 2 tbs taco seasoning
- 1/2 cup corn
- 1/2 cup black beans
- 2 tomatoes
- 2 cup chopped lettuce (I use a lot!)
- 1/2 avocado
- 1 cup salsa (depends how much people like salsa, I use a lot of it!)
- 6 tortillas (whole wheat or corn)
- Any other taco toppings you enjoy!
Directions:
- In a frying pan brown the meat and add taco seasoning. Turn to low and let it sit for 5 min.
- In a sauce pan heat up the corn (from a can, frozen, or fresh).
- If using canned black beans, rinse before serving.
- Chop tomatoes, lettuce, and cut avocado slices.
- Warm up the tortillas for 15-20 seconds.
- Stuff your tortilla with all the yummy Mexican toppings and watch as the juice runs out the other end!
- If you have leftover toppings, make a little Mexican salad with salsa as the dressing!
- Disfrutar!
