Yoga Bread French Toast

On Sunday I went to Wegmans with my friend and bought a ton of delicious food, like fresh raspberries, avocado hummus, vegetable chips, yoga bread (whole wheat, cranberry, and pumpkin seed), vegetable and chicken stock, butternut squash pasta sauce (can't wait to try this!), and cereal. The yoga bread was a hit in my house!  The yoga bread is good by itself, toasted, dip in soup, or make french toast.  This morning I made french toast using the yoga bread, it was so delicious!



Yoga Bread French Toast

Serves: 1
Ingredients:

  • 1 slice of Yoga bread (whole wheat cranberry bread, but you can use any bread)
  • 1 whole egg
  • 1 egg white
  • 3 Tbsp of light soy milk
  • 1/2 Teaspoon cinnamon
  • 1/2 Teaspoon coconut oil
  • 3 Extra cranberries, for garnish
  • toppings: powdered sugar or syrup

Directions:
1. Whisk egg, egg white, milk, and cinnamon in a bowl.
     2. Slice bread in 4 slices (because my slice was big)

3. Soak bread in egg mixture.
4. Heat coconut oil in a pan with low-medium heat.
5. Place bread flat on pan, let each side heat for 2 minutes until brown.

6. Take the bread off the heat onto a plate and scramble the rest of the egg mixture. (Don't waste it! It provides protein and nutrients that are important!)
7. Drizzle syrup or powdered sugar.
