Best of Both Egg Worlds!

One of my favorite meals to make (are easy, too) are eggs. There are so many things you can do with eggs, from sweet to adding vegetables! My two favorite ways for eggs to be prepared are: eggs over easy and a delicious omelette. I am so indecisive that I decided to combine them so I could have the best of both egg worlds!

Eggs Over Easy in an Omelette 

Serves: 1
Ingredients:
-2 eggs
-1 egg white
-Salt and pepper
-any omelette additions: spinach, black beans, onions, red pepper, cheese, etc.
-piece of ezekiel toast (any kind of whole grain toast)
-Pan spray



Directions:
1. Spray pan on the skillet.
2. Heat skillet on medium heat.
3. Whisk one egg, one egg white, salt, pepper, omelette additions.
4. Add whisked omelette into the hot skillet. Let it cook for about 3 min (until you can flip it w/o it breaking). Once the other side starts cooking, break a hole in the middle and break the egg into the middle. Make the hole bigger so the white from the egg is able to cook. You can flip it again, but you don't have to.
5. Enjoy the best of both egg worlds. The best way to eat it: break the egg yolk in the middle with toast, than eat the omelette, and your taste buds will be changed!
