Italian Chicken with Spinach


 Italian Chicken With Spinach
Serves: 2
Ingredients:
  • 1 cup whole grain pasta (I had my leftover heart pasta from Valentine's day)
  • 2 chicken breasts
  • 1 tbs olive oil
  • 2 cups basil tomato sauce
  • Italian seasoning
  • Pepper and salt
  • 1/2 cup red onion, chopped
  • 1 garlic clove
  • 1/4 cup shredded part-skim mozzarella (fresh mozzarella would be so good too)
  • 5-6 oz bag of fresh baby spinach (I just added until I filled the pan)
  • Romano cheese (Or parmesan cheese): optional for topping
Directions:                
1. Add olive oil in a skillet, heat on medium heat.
2. Bowl water for pasta.
3. Sprinkle pepper, salt, and italian seasoning on both sides of each chicken breast. Cook chicken in skillet. Cook both breasts for about 3 min on each side (more time may be needed).
4. Add pasta to boiling water, reduce heat.
5. Once chicken is cooked through, remove from pan. Add onion and garlic, you may need to add a bit more olive oil to sauté the onions and garlic. Cook for about 2-4 minutes, add 1 cup of tomato basil sauce. Add the chicken on top of the sauce.
6. Top chicken with remaining tomato sauce, spinach, and mozzarella cheese. Cover and let it sit until the spinach is wilted and cheese is melted (about 7-10 min).

                      
Wilted spinach and melted cheese:
7. Drain pasta, add to plate and top with chicken, sauce, spinach, and top with romano cheese.
8. Pretend you are at a restaurant and enjoy this delicious, healthy chicken dish!
