Strawberry Shortcake Souffle
Serves: 4Total time: 30 min
Ingredients:
- 3/4 cup part-skim ricotta
- 2 egg whites
- 1 yolk
- 2 tablespoon agave
- 1 teaspoon vanilla extract
- 1 teaspoon lime zest (I used 1/2 teaspoon of lime juice, but the souffle was on the liquid side)
- 1/2 cup Jersey fresh strawberries, chopped up (Duffield's Farm has amazing strawberries!)
Directions:
1. Preheat oven to 400 degrees.
2. Beat the egg whites with a mixer until stiff peaks form, it takes a couple minutes.
3. Whisk egg yolk, ricotta, agave, vanilla extract, and lime zest until combined, with a rubber spatula. Stir in strawberries.
4. Fold the egg whites into four souffle dishes (ramekins). Place the dishes on a baking pan, add an inch or two of warm water on the baking pan (this helps them cook evenly and moist).
5. Bake in the middle of the oven (bottom layer of oven) for about 20 minutes. The result should be puffed and crusted on top and jiggly in the center.
6. Serve and enjoy this light dish!

I am so excited about this time of year, Jersey produce is starting and so many recipes are needed to be made! My family works hard to produce the sweetest and most delicious strawberries possible. I have a hard time eating other strawberries because I am spoiled with these babies in my back yard. The other positive note: strawberries are so good for you!
