Miracle Noodles!

Who would ever think that rice and noodles can be zero calorie, no carb, and only made of soluble fiber? I never knew such a product existed, until my brother bought it. It is called the "Miracle Noodle" or "Miracle Rice".


My brother was on the modified Atkin's diet for his epilepsy. The diet is not a good diet for a typical person, it consists of 20g of net carbs for the whole day (that is a half banana or half can of soda, etc.) and as much fat as possible. To get the net carbs, you subtract fiber from carbohydrates. As you can imagine, this is a very hard diet to keep track of and to continue. A couple weeks in he had to stop it. So he was left with these "Miracle Noodles" that he did not want, so I took them and I love them! They absorb any flavors from the dish, so you can't even realize that it is zero calorie!


Salmon with Miracle Noodles and Brussel Sprouts in Tomato Sauce
Serves: 1

Ingredients:
  • 1/2 cup brussel sprouts
  • 1 clove garlic, minced
  • 2 slices of red onion
  • 1/2 cup spinach
  • 2 tomatoes
  • 1-1/2 tsp of italian seasoning
  • dash salt
  • 2 tsp olive oil
  • 7 oz bag of Miracle Noodle-angel hair
  • 4 oz salmon
Directions:
  1. Preheat oven to 350 degrees F.
  2. Cook angel hair according to package, set aside.
  3. In a skillet: heat olive oil and add onion, brussel sprouts, spinach, garlic,  tomatoes, salt and italian seasoning. 
  4. Place salmon on foil, sprinkle Italian seasoning on top, and fold the foil edges up. Let it bake for 12-15 min.
  5. Add the Miracle Noodles to the tomato sauce. Let it sit for 15 min.
  6. Place noodles and everything in the skillet on a plate and top it off with the salmon.
  7. Enjoy this low carb, low cal, healthy pasta dinner!
