Blueberry Oatmeal Pancakes with Blueberry-Chia Syrup




Blueberry Oatmeal Pancakes with Blueberry-Chia Syrup
Serves: 2 (6 small pancakes)

Ingredients:
For pancakes 
-1 cup one minute oats
-1/2 teaspoon baking powder
-1 tbsp cinnamon
-1 egg white
-1 egg
-1 banana
-1/2 teaspoon vanilla
-1/2 cup blueberries 
-Coconut oil
For Syrup
-1 tbsp chia
-1/2 cup blueberries
-1 cup water
-1 teaspoon sugar

Directions:
1. In a small sauce pan, add all ingredients for the syrup. Boil, than lower heat, stir occasionally. Let the water boil down so the syrup becomes thick (takes about 10 minutes or more, depending how thick you want it).
2. In a small bowl, mix the oats, baking powder, and cinnamon. In another small bowl, mash the banana than mix in the egg white, egg, and vanilla.
3. Blend the wet ingredients into the dry ingredients, once mixed, carefully fold in blueberries.
4. Heat a little bit of coconut oil on a skillet pan.
5. Once pan is heated, add about 2 tbsp of the oat mixture on the hot pan. Let sit about 2 minutes on each side.
6. Top pancakes with the syrup and some 10x sugar.
7. Enjoy!! (It may not look very pretty, but it was so delicious and healthy!)
