Chunky Guacamole
Chunky Guacamole
Ingredients:-2 ripe avocados
-1 medium ripe tomatoes, seeded and diced
-1/2 red onion, chopped
-1/2 long hot, chopped
-1/4 bunch of cilantro, chopped
-3 tablespoons lime juice
-1 teaspoon sea salt
Directions:
1. Peel and dice onion, add to bowl.
2. Seed (remove the liquid part so the guac is not too wet) and chop the tomatoes, add to bowl.
3.Remove the white part and seeds from the long hot and chop, add to bowl.
4. Chop and add avocados to bowl (cut in half, remove seed, dice while in the shell, remove with a spoon).
5. Add lemon juice.
6. Chop cilantro and add.
7. Fold ingredients in bowl so they mix, but make sure you don't mash the avocado since it is "chunky" guacamole.
8. Add salt and fold in gently.
9. To keep from browning, put the seed into the mixture and cover with plastic wrap, refrigerate.
10. Serve with homemade chips (below) and enjoy!
Homemade Tortilla Chips (savory or sweet)
Ingredients:
-2 whole wheat tortillas
-3/4 tablespoon olive oil (savory) or coconut oil (sweet)
-1/2 teaspoon sea salt (savory) or cinnamon and sugar (sweet)
Directions:
1. Preheat oven at 350 degrees F.
2. Cut tortilla into 8 pieces per tortilla (or just rip for different sizes).
3. Spread out on baking sheet, no overlapping, drizzle with olive oil and top with salt.
4. Bake for 5 min, flip, continue baking for another 5 min.
5. Dip into salsa or guac
