Grilled Corn and Black Bean Salsa


Grilled Corn and Black Bean Salsa
Ingredients:
-2 ears of Duffield's Jersey Fresh corn, husks removed
-1/2 can of black beans, rinsed
-2 medium tomatoes
-10 grape tomatoes (or 1 more medium tomato)
-2 garlic cloves, chopped
-1/2 vadalia onion
-1 long hot pepper
-1/2 cup cilantro, chopped
-1 tsp lime juice
-1 tbsp olive oil, divided
-sea salt
-pepper



Directions
1. Turn on the grill. Drizzle corn with olive oil, salt, and pepper. Place the corn on the grill and turn every 2 minutes, until corn is grilled,  just a few brown lines should be present.
2. Chop tomatoes, onion, and garlic into small pieces.
3. Slice the long hot length wise and remove the white part and seeds. Chop the long hot into small pieces.
4. Cut the kernels off the grilled cob.
5. Mix the corn, the rinsed black beans, tomatoes, onion, garlic, long hot, and cilantro into a bowl. 
6. Drizzle a little bit of olive oil and lime juice over the mixture. Sprinkle salt and pepper, to taste.
7. Let it sit in the fridge for an hour or over night for the best flavor!
8. Dip your chip into this yummy summer salsa!

-1 ear= 80 calories, 1 g fat, 17 g carb, 5 g sugar, 2 g fiber, 3 g protein
-Store in refrigerator for up to 5 days
-Cooked corn may be frozen up to 6 months
-Cook fresh corn in boiling water for 1 minute, grilled with husks (soak for a couple minutes before), grilled without husks on, or in the microwave with a little water in a bowl for 2 mins.
-Good source of fiber, magnesium, phosphorus, potassium, manganese

My new favorite thing to do on the grill: grill corn! I love the flavor that it gives corn. I love this picture I took while I was grilling the corn with the corn growing in the back ground. I usually eat my corn not cooked or if cooked, I eat it without butter or anything on it. Fresh corn is so flavorful that you don't have to add anything to it. But for grilling the corn, it is the best with olive oil, salt, and pepper.
