Egg Frittata Muffins

Egg Frittata Muffins
Makes: 12 muffins (4 people)
Ingredients:
-8 eggs*
-2 cups spinach
-1 cup grape tomatoes, chopped 
-1/2 red pepper, chopped
-1/2 red onion, chopped
-Spices: thyme, sea salt, pepper, nutmeg, garlic powder
-splash of milk (any kind of milk)
-about 1/2 cup Shredded cheddar cheese (any cheese would be good, thats all I had)


Directions:
1. Spray muffin pan and preheat oven to 350 degrees F.
2. In medium bowl, crack eggs. 
3. Mix in all other ingredients, except cheese.

4. Add mixture into muffin pan.
5. Top with a little bit of cheddar cheese over each muffin.

6. Bake for 15 to 20 min, until cheese browns.

7. Let them cool in pan till able to touch, than remove and enjoy!




*If you are watching cholesterol or fat, you can opt to do egg whites.

These muffins are a great option for a quick breakfast. Make them, than freeze them or keep in fridge for a quick breakfast on-the-go. Especially with school starting, these are a great and healthy option for your kids to kick their school day off with the right breakfast. Pair it with a piece of whole wheat toast and fruit!
