Caprese Chicken

Caprese Chicken 
Serves: 2
Ingredients:
- 2 chicken breasts
-2 tbsp balsamic vinegar
-2 oz of fresh mozzarella
-2 tbsp pesto (or ground up fresh basil, parmesan cheese, olive oil, salt, & pepper)
-2 slices of tomato
Directions:
1. Marinate chicken with balsamic vinegar in a bag for at least 1 hour.
2. Slice mozzarella into two slices.
3. Grill chicken for about 8 min each side.
4. Top each piece of chicken with pesto, mozzarella, and tomato slice. Drizzle with additional balsamic.
5. Enjoy!
