Whole Wheat Pumpkin Banana Bread

Serves: 6-8 people
Ingredients:
-1/8 cup coconut oil, melted
-1/4 cup plain Greek yogurt
-2 large eggs
-1 cup pureed pumpkin, drain liquid
-3 ripe bananas, mashed
-1 tsp vanilla extract
-1/3 cup brown sugar
-1 cup whole wheat flour
-3/4 cup oat flour (ground old fashion oats)
-3 tbsp ground flax meal
-1/2 tsp baking powder
-1 tsp baking soda
-3/4 tsp salt
-1 tsp cinnamon
-1 tsp pumpkin pie spice
-raw oats and raw sugar for topping
Directions:
1. Preheat oven to 350 degrees.
2. In a medium bowl combine all dry ingredients (brown sugar, flour, flax meal, baking soda, baking powder, spices, and salt).
3. In another bowl, mix all wet ingredients (oil, bananas, yogurt, eggs, pumpkin, and vanilla).
4. Spray and flour a loaf pan( 8 1/2 x 4 1/2).
5. Add the liquid mixture to the dry mixture and combine. (If the mixture seems too wet, add more flour to get a thicker batter).
6. Add batter to loaf pan. Bake for 55 minutes or longer, keep an eye on it and place a tooth pick to check if it is cooked all the way through.
7. Once finished, remove from oven, let it sit for a bit, than remove from loaf pan and let it cool on wire rack.
8. Enjoy on a crisp fall day!
