Salmon Stir-fry with Wild Rice
Serves: 3
Ingredients:-3, 4 oz salmon filets
-1 tbsp olive oil
-1/2 tbsp coconut oil
-1/2 red pepper, cut in long slices
-2 large shallots, sliced
-2 cups cups broccoli
-2 garlic cloves, minced
-1 large carrot, sliced
-3 tbsp soy sauce
-2 tbsp rice vinegar
-Pinch of brown sugar or honey
-1 tbsp sesame seeds
-wild rice, brown rice, or quinoa to serve with
Directions:
1. Heat a large skillet with 2 tbsp soy sauce, 1/2 tbsp olive oil, 1/2 tbsp coconut oil.
2.Heat a medium skillet with 1/2 tbsp olive oil and 1 tbsp soy sauce.
3. Once large skillet is heated, add garlic, carrots, pepper, shallots, broccoli, and brown sugar. Cook for 10 min, until veggies get soft.

4. Once medium skillet is heated, add salmon slices. Cook each side for about 2 min and flip to cook the other side for 2 min. Sprinkle with sesame seeds and set aside so it doesn't over cook.
5. Combine salmon with veggies and serve over rice or quinoa.

6. Enjoy!
