Spinach, mushroom, and parmesan stuffed chicken
Serves: 2
Ingredients:
  • 2 thin chicken breasts
  • 2 medium size mushrooms (I used button mushrooms)
  • 2 garlic cloves, minced
  • 3 cups fresh spinach
  • 1/4 cup parmesan cheese (and some for topping at the end)
  • Spices: Salt, pepper, paprika, Italian seasoning
  • About 2 tsp olive oil
Directions: 
  1. Preheat oven to 325 degrees F. 
  2. Heat a medium-size skillet, with the olive oil, on medium heat. Add mushrooms when heated and cook for about 2 minutes.
  3. Add garlic and spinach to the mushrooms, cook until spinach starts to wilt. 
  4. Season chicken with spices, fill with sautéed mixture (you may have extra), and top about 1/8 cup parmesan cheese to each chicken breasts.
  5. Fold each side to meet each other and place 2 tooth picks to keep the chicken together when cooking. 
  6. Top chicken with spices. Bake for about 45 minutes, until chicken is cooked all the way.
  7. Enjoy the chicken topped with addition parmesan cheese and any extra spinach and mushroom mixture that was left over. Broccoli and wild rice was a great addition to the chicken, but pair it with your favorite side dishes!
