Spinach, mushroom, and parmesan stuffed chicken
Serves: 2
Ingredients:
- 2 thin chicken breasts
- 2 medium size mushrooms (I used button mushrooms)
- 2 garlic cloves, minced
- 3 cups fresh spinach
- 1/4 cup parmesan cheese (and some for topping at the end)
- Spices: Salt, pepper, paprika, Italian seasoning
- About 2 tsp olive oil
Directions:
- Preheat oven to 325 degrees F.
- Heat a medium-size skillet, with the olive oil, on medium heat. Add mushrooms when heated and cook for about 2 minutes.
- Add garlic and spinach to the mushrooms, cook until spinach starts to wilt.
- Season chicken with spices, fill with sautéed mixture (you may have extra), and top about 1/8 cup parmesan cheese to each chicken breasts.
- Fold each side to meet each other and place 2 tooth picks to keep the chicken together when cooking.
- Top chicken with spices. Bake for about 45 minutes, until chicken is cooked all the way.
- Enjoy the chicken topped with addition parmesan cheese and any extra spinach and mushroom mixture that was left over. Broccoli and wild rice was a great addition to the chicken, but pair it with your favorite side dishes!
