Blueberry Muffin Cookies With A Lemon Glaze
Amount: 8 cookies
Ingredients for cookies:
  • 2 cups almond meal/flour
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp vanilla
  • dash of salt
  • 1/2 tsp cinnamon
  • 1/2 cup blueberries (I used frozen)


Ingredients for lemon glaze:
  • 1 lemon
  • zest of the lemon
  • 3 tbsp powdered sugar 


Directions:
  1. Preheat oven to 375 degrees. Place wax paper on a baking sheet.
  2. Combine flour, baking powder, salt, and cinnamon and mix.

  3. Crack eggs in a separate bowl. Than add all the wet ingredients into the flour mixture: vanilla, maple syrup, and eggs. 


  4. Blend together.
  5. Fold the blueberries into the mixture. (Frozen blueberries may change the dough color).
     

  6. Spoon dough into cookies (about 1 tbsp) on the baking sheet. 
  7. Bake for 15 minutes, until brown.
  8. While the cookies are baking, create the lemon glaze.
  9. Blend lemon juice, zest, and powdered sugar together into a liquid glaze, you may need to adjust according to your preferences.
  10. When cookies are done, let cool, and drip lemon glaze over the cookies.
  11. Enjoy for a low-carb, high-protein breakfast or snack!
