Coconut Lime Macaroons
Makes 10 * make 20 bite size onesIngredients:
- 2 egg whites at room temp
- 2 tbs honey
- 1/4 tsp salt
- zest of one lime (1 tbs)
- 1 tsp vanilla extract
- 2 cups unsweetened, shredded coconut
- coconut oil to prevent sticking
- optional: melted dark chocolate
Directions:
- Preheat oven to 325 degrees
- In a bowl, whisk egg white, honey, salt until mixed and frothy
- Whisk in lime zest and vanilla
- Slowly add coconut and stir until egg mixture and coconut are combined
- Line baking sheet with parchment paper and coconut oil spread so the cookies don't stick.
- Make 10 balls or more smaller balls onto baking sheet.
- Bake until golden brown for 15 minutes.
- Place them on cooling sheet
- Once cooled, drizzle with melted dark chocolate.
- Enjoy!
*They were so good, but fell apart a little. Next time I would make them bite size or add another egg white.
