Coconut Lime Macaroons

Coconut Lime Macaroons
Makes 10 * make 20 bite size ones
Ingredients:
  • 2 egg whites at room temp
  • 2 tbs honey
  • 1/4 tsp salt
  • zest of one lime (1 tbs)
  • 1 tsp vanilla extract
  • 2 cups unsweetened, shredded coconut
  • coconut oil to prevent sticking
  • optional: melted dark chocolate
Directions:
  1. Preheat oven to 325 degrees
  2. In a bowl, whisk egg white, honey, salt until mixed and frothy




  3. Whisk in lime zest and vanilla
     

  4. Slowly add coconut and stir until egg mixture and coconut are combined
     

  5. Line baking sheet with parchment paper and coconut oil spread so the cookies don't stick.
  6. Make 10 balls or more smaller balls onto baking sheet.
  7. Bake until golden brown for 15 minutes.
  8. Place them on cooling sheet
  9. Once cooled, drizzle with melted dark chocolate.
  10. Enjoy!

*They were so good, but fell apart a little. Next time I would make them bite size or add another egg white.
