No-mayo coleslaw
Healthy Coleslaw
Ingredients:
- 1/2 head of green cabbage, thinly sliced
- 1/2 cup carrots, thinly sliced
- 1 cup red cabbage, thinly sliced
- 1 tsp honey
- 2 tsp dijion mustard
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- salt and pepper to taste
Directions:
- In a small bowl, mix honey, mustard, apple cider vinegar, and olive oil. Set aside.
- In a large bow, mix the green cabbage, red cabbage, and carrots.
- Add the vinegar mixture into the cabbage mixture and combine. Add salt and pepper to taste.
- Refrigerate until ready to serve. (the longer it sits, the tastier it will be!)
- Enjoy!
