Black bean veggie burger with garlic lemon aioli sauce
Servings: 5 patties
Ingredients:

- 1 cup black beans
- 1/4 yellow onion, chopped
- 1/4 red pepper, chopped
- 1 garlic clove, chopped
- 1 cup steamed mixed veggies (I used broccoli, carrots, and cauliflower)
- 1 cup whole wheat bread crumbs
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper
- 1 egg
- Toppings: cheese, lettuce, tomato, avocado, onion, etc.
Directions:
- Mash the black beans in a food processor or using a fork. (I mashed them too much, so I would do it less next time)
- Finely chop all veggies and add the black beans (food processor: add veggies to mashed black beans), blend together.
- Move mixture to a bowl, add bread crumbs, spices, and egg.
- Make into patties and grill on foil until golden brown (about 10 min).
- Place in bun or on top of a big salad. Add aioli sauce, avocado, lettuce, onion, tomato, etc.
- Enjoy!
Makes: 1 cup
Ingredients: (all room temp)
- 2 egg yolks
- 4 garlic cloves, minced
- 1/8 tsp sea salt
- 1 tsp Dijion Mustard
- 1 cup virgin olive oil
- 1/2 tsp cold water
- 1 tsp lemon juice
Directions:
- In a bowl, mash salt and garlic together into a paste.
- Whisk in mustard, than egg yolks.
- Slowly add half the oil as you whisk.
- Slowly add water and lemon juice while whisking.
- Slowly add the rest of the oil as you whisk.
- The mixture will get thicker when whisking.
- Place it in the fridge. When ready add it to burgers, sandwiches, or use it as a dipping sauce.
