Garlic mushroom quinoa

Summertime is about family and friends getting together to enjoy the relaxing summer days or nights. Food is usually the central point of many parties, with BBQs, pig roasts, and pool parties. If you are looking for something healthy and different to bring to a gathering, this is a great side dish to burgers, chicken, steak, and fish!

Garlic Mushroom Quinoa

Serves: 5
Ingredients:
  • 6 cups of sliced mushrooms
  • 1 cup quinoa, rinsed 
  • 2 cups chicken or vegetable broth
  • 3 garlic cloves, minced
  • 2 Tbs olive oil
Directions:
  1. Rinse quinoa. With medium heat, add quinoa and broth, cook until boil than lower to low heat and cover. Let the quinoa cook for about 20 minutes, until fluffy.
  2. Heat oil in skillet with medium heat. Sauté mushrooms for about 10 minutes, make space for the garlic, and sauté the garlic for 2 minutes.

  3. Add quinoa to skillet, let it heat up.

  4. Place in a serving dish and enjoy!
