Tequila Lime Chicken Fajitas

    I take part in a blog community called Recipe Redux. Each month we are given a theme to be creative a use the theme in our cooking or baking. This month's theme is to incorporate liquor into our dishes. I was torn between a coconut rum cake and tequila lime chicken. I love Mexican food and decided to make dinner for everyone.
    Currently, on our farm we have our own green peppers, so I decided to incorporate peppers into the dish. You can never go wrong with peppers and onions! This is a perfect grilling dish or even in a cast iron skillet. I am going to use both: grill the chicken and sauté the onions and peppers in the skillet. We also have our own tomatoes, which will be fantastic on top of the fajitas.  
    Some ways to make the fajitas healthier:
     -Grill, bake, or sauté the protein
     -Protein choices: fish, steak, chicken, shrimp, beans
     -Veggies: peppers, onions, squash, corn, lettuce, tomatoes
     -Toppings: salsa, low-fat cheese, guacamole, avocado slices, Greek Yogurt
     -Wrap it: whole-wheat tortillas, lettuce wrap, salad

Tequila Lime Chicken Fajitas
Serves: 4-5
Chicken Ingredients:
  • 6 pieces of chicken breast
  • 1/2 cup tequila
  • 1 cup lime juice, fresh
  • 1 lime zest
  • 1 tbs olive oil
  • 1 tsp sea salt
  • 1/4 tsp pepper
  • 1/4 tsp cayenne papper
  • 1/4 tsp cumin
  • 1/2 cup fresh cilantro, chopped
  • 2 garlic cloves, minced
Directions:
  1. In a big Ziploc bag, add all ingredients and let it marinate in the fridge for 3 or more hours.

  2. Grill chicken on medium heat for 6-8 minutes on each side, depending on thickness. 
  3. Slice and add in fajitas.

Fajita Ingredients:
  • 1/2 red pepper, sliced thinly
  • 1/2 yellow pepper, sliced thinly
  • 1 green pepper, sliced thinly
  • 1 garlic clove, minced
  • 1 onion, sliced thinly
  • 1 tbsp olive oil
  • salt and pepper
  • 5 whole wheat tortillas
  • toppings: salsa, guacamole, lettuce, tomato, cheese
Directions:
  1. In a cast iron skillet, heat olive oil over medium heat. Add the peppers and onions, heat for 5 minutes. Add garlic, salt, and pepper, heat for another 5 minutes.
  2. Heat tortillas, add chicken, peppers, onions, and any other toppings.
  3. Enjoy!
