Buffalo pulled chicken
Happy Halloween! As you are thinking about a quick and yummy dinner to do for the eventful day, look no further! This buffalo pulled chicken is made in the crock pot and than shredded with a fork and ready for a sandwich! PLUS it is orange for halloween! This is also a great dish for football season. Nothing better than a crock pot of pulled buffalo chicken to get everyone's taste buds kicking!
Buffalo Pulled Chicken
Serves: 8-10 sandwiches
Ingredients:
- 5 boneless chicken breasts
- 1 bottle of buffalo sauce, 16 oz (We used Sweet Baby Ray's, but any would be fine)
- 2 tbs dry ranch mix
- Optional: Hamburger buns, kaiser rolls, lettuce, cheddar cheese, blue cheese, ranch dressing, tortilla chips, celery, carrots, etc.
Directions:
- Place chicken in crock pot.
- Add buffalo and ranch mix.
- Cook on high for 4-5 hours, until chicken breaks when a fork touches it.
- Remove chicken from the crock pot and shred with 2 forks.
- Place pulled chicken back into the crock pot and cook for 5-10 more minutes, so all the pieces of chicken can be doused in buffalo sauce yumminess!
- Add chicken to a sandwich with buns, a lettuce wrap, with tortilla chips, or plain!
- Enjoy!
*For a healthier option: I used lettuce instead of a bun and topped it with cheddar cheese. I was still hungry, so I made a salad with the lettuce, buffalo chicken, cheddar cheese, and crushed tortilla chips on top...delicious!
