Chicken vegetable soup
Quick and Easy Chicken Vegetable Soup
Totalt Time: 1.5 hrs
Ingredients:
- 1 can chicken, 12.5 oz
- 1 can diced tomatoes, 15 oz
- 16 oz chicken broth, reduced sodium
- Half head of cabbage
- 1 cup baby carrots (or 1 large carrot)
- 1 large onion
- 2 stalks celery
- 2 cup kale
- salt and pepper to taste
- optional toppings: parmesan cheese, whole wheat crackers, whole wheat noodles
Directions:
- Chop all vegetables into small chunks.
- In a large pot, add all ingredients, except chicken and optional toppings. Simmer for 1 hour.
- Chop the chicken in small chunks.
- Add chicken to pot, cook for 5-10 more minutes.
- Add to bowl, top with parmesan cheese and any other toppings.
- Enjoy on a cold day! Make extra for leftovers or freezing for later!
