Chicken vegetable soup

Quick and Easy Chicken Vegetable Soup
Serves: 4
Totalt Time: 1.5 hrs
Ingredients:

  • 1 can chicken, 12.5 oz
  • 1 can diced tomatoes, 15 oz
  • 16 oz chicken broth, reduced sodium
  • Half head of cabbage
  • 1 cup baby carrots (or 1 large carrot)
  • 1 large onion
  • 2 stalks celery
  • 2 cup kale
  • salt and pepper to taste 
  • optional toppings: parmesan cheese, whole wheat crackers, whole wheat noodles
Directions:
  1. Chop all vegetables into small chunks.
  2. In a large pot, add all ingredients, except chicken and optional toppings. Simmer for 1 hour.
  3. Chop the chicken in small chunks.
  4. Add chicken to pot, cook for 5-10 more minutes.

  5. Add to bowl, top with parmesan cheese and any other toppings.


  6. Enjoy on a cold day! Make extra for leftovers or freezing for later!
