Breton Cracker Crab Cake Bites

      School is almost out and summer gatherings are starting! I know when I have an event or a gathering to go to or host, I want to present a healthy, delicious, and easy dish to bring. I usually opt for the good ole' veggies and dip, not this time! I created crab cake bites that will impress your guests!

        We were able to pick original or artisanal sweet potato and ancient grains cracker. With my obsession with sweet potatoes, I picked their sweet potato kind...I am so happy I did! My husband even loved the crackers!  These crackers provide a tender crisp texture and delicious taste made with ancient grains like quinoa and rye, with sweet potato pieces baked right in them! You can't go wrong with picking them up for your next event. They would go great with a sweet jam and goat cheese, cheddar cheese and apples, or crushed into these crab cake bites!

Breton Cracker Crab Cake Bites
Makes: 28 bite size crab cakes (1 tbsp each)
Ingredients:
  • 10 Breton Artisanal Sweet Potato & Grain crackers, crushed
  • 16 oz lump crab meat
  • 1 egg
  • 1/4 cup plain Greek yogurt (I used siggi's plain)
  • 1 tbs mustard
  • optional herbs/spices: 1 tsp old bay (low sodium), 1/2 tsp garlic powder, 1/2 tsp parsley
Directions:
  1. Preheat oven to 300 degrees F.
  2. Combine all ingredients together.
  3. Bake for 30 minutes.
  4. Top with a dollop of Greek yogurt and green onion or parsley.
  5. Enjoy!


 Since I live in a tiny home, we only have a toaster oven to do our baking! It took 3 batches and 1.5 hrs to bake all 28! :)
I sliced radishes and added parsley to decorate the plate for a pop of color.
So easy, delicious, and healthy...a must try!!
