Personalized egg frittata
This past weekend I experienced one of the most educational, exhausting, and exciting weekends. I was a part of the staff for SCW Mania, a fitness conference in Philadelphia. I took part in helping set up, take down, monitor doors, be the captain for sessions, and take part of the Mania experience. I was on my feet all day either listening to educational lectures or taking part of a hard new workout between working the conference. It was exhausting, but so worth it! I feel that it will make me a much better personal trainer and dietitian!
Since Philadelphia is 25 minutes away from me, I commuted from home two out of the three mornings. I didn't get much sleep, but I made sure I packed the correct meals to keep me going throughout the busy, active day. Being prepared is so important to making healthy choices.
I have to be honest, the first day I did not prepare any meals and I lived on snacks foods. The quick meal I ate, for two meals during one day, was animal crackers and peanut butter with fruit and a quest bar in between. My options were limited and I had no time between sessions. Working out all day I had to consume something. I have to say I did not feel great after that day, so I made sure to prep my meals the night before.
Each night I got home, I spent some time in the kitchen preparing my meals for the next day. I wanted to make a healthy breakfast and lunch to keep me moving throughout the next day.

- Breakfast: personalized egg and kale frittata and banana
- Lunch: salad with balsamic vinegar, sprouted whole wheat sandwich with low sodium turkey and lettuce, apple
- Snacks: triple zero yogurt and a Smores Quest bar.
This month's theme for Recipe Redux is to create a new idea for breakfast. Since I have been living off of eggs each morning, I thought I would provide everyone with what I have been making the night before I go to work or an event like the fitness convention. It is an easy way to prepare for a healthy start for the next day.
Personalized Egg Frittata
Ingredients:
-1 cup greens (I used kale and spinach)
-1 egg
-3/4 cup egg whites (4 egg whites)
-1/4 oz cheese (I used sharp cheddar; any cheese would work)
-Spices: Garlic salt, minced dried onion, pepper

Directions:
- In a bowl, beat eggs, egg white, spices.
- Add greens and mix.
- Spray a small oven- and microwave-safe container with olive or vegetable oil.
- Add the egg mixture to the container, top with cheese.
- Bake at 350 degrees for 30 minutes, make sure the frittata does not jiggle! (I use my toaster oven.)
- Remove and let it cool for 5-10 minutes.
- Place the lid on and place in fridge.
- Remove in the morning, pop in microwave for a minute and half or a toaster oven.
- Enjoy!

- Egg options to make ahead: I recently posted this kale and mushroom crust-less quiche. When I made this quiche, I sliced a piece each day for my breakfast and I just reheated it in the microwave at work. Super easy and healthy! Another egg option are these egg frittata muffins
- Muffin options: These sweet potato wheat muffins, berry banana whole wheat muffins, and cranberry orange walnut muffins.
- Pancake options: blueberry oatmeal pancakes with blueberry-chia syrup and whole wheat banana pancakes
