Vegan Sandwich and Salad

Happy Earth Day! Today is a great day for yard work, gardening, and a picnic outside. My husband and I have a ton of bamboo in our yard. It is the hardest stuff to get rid of...ANYONE HAVE TIPS TO GET RID OF BAMBOO? It is pretty to look at but grows like crazy. My husband has cut some down, which made a great area for a picnic. Since it is our one year anniversary and The Recipe Redux's April theme is showing a healthy recipe to bring to a picnic. I decided to have a nice healthy picnic in the bamboo.What do you pack in your picnic basket?

Here are a few recommendations:
Trail mix or nuts
Sandwich (no utensils needed)
Salad with dressing on the side (only a fork needed)
Fruit

Ingredients in order: 
Ezekiel bread-toasted
Sun-dried tomato hummus
lettuce
red cabbage
carrots
cucumber
watercress*
avocado

Ingredients:
Lettuce
Spinach
cucumber 
carrots
red paper
red cabbage
watercress*
sun flower seeds
peptides
nutritional yeast
toasted sesame seeds



Apple, Salad, dressing on side, Salt & Pepper cashews, vegan sandwich, champagne

I bought this watercress after a NJ Academy of Nutrition and Dietetics event this past week. The topic was about the future of farming: aquaponics. The farmer is Cody Parker of Drop the Beet Farms in Freehold, NJ. I obviously had to go since I come from a family of farmers. Cody did a great job on such an interesting topic. Aquaponics is a way of farming that is soil-free, uses fish to fertilize, is under a greenhouse, and can be year around. Mostly herbs and leafy greens can be grown in this environment. Cody also grows oyster mushrooms from straw. I can't wait to visit to learn more. At the end of the event he had a few items he was selling. I never had watercress so I decided to make the purchase. 

About watercress:
leafy green
bitter taste (from a phytochemical compound found in cruciferous vegetables)
rich in vitamin C, A, B6, B12
rich in iron, magnesium, calcium, phosphorus
Use in soup, salad, garnish, sandwich, saute in Asian recipe
