Roasted red pepper hummus stuffed chicken
Hummus is the star for this week! I received 5 free hummus samples from Sabra hummus to use within my recipes, but they have so many more flavors to choose from! I love how Sabra hummus is a plant based addition to meals. In my Cinco de Mayo recipe: Jalapeno hummus tostadas I focus on plant based. Along with a recipe, I provided research on a plant based diet. I personally am not 100% plant based, I do enjoy meat sometimes. The recipe below uses hummus to keep chicken moist, to add flavor, extra protein, and fiber. I stuffed the chicken with hummus, basil, spinach, and Jersey Greenhouse tomatoes. I folded the chicken over and topped it with more hummus and some bread crumbs. I am looking forward to making this recipe again...maybe trying a different flavor hummus!

Roasted Red Pepper Hummus Stuffed Chicken

Serves: 2
- 2 chicken breasts
- 4 tbsp Sabra Roasted Red Pepper hummus
- 1/4 cup fresh basil leaves
- 2 garlic cloves
- 1/2 Jersey Greenhouse tomato, sliced
- 1/2 cup spinach
- 2 tbsp bread crumbs
- optional to roast along with chicken: red peppers, broccoli
- Olive oil
- Salt and pepper
- Preheat oven to 350 degrees F.
- Mince basil and 2 garlic cloves, mix together (a quick pesto).
- Butterfly chicken breast. Add 1 tbsp to one side and the basil and garlic mix to the other side of chicken. Add tomato and spinach on top of hummus and/or basil mix. Fold chicken over.
- Top chicken with 1 tbsp of hummus. Sprinkle 1 tbsp of bread crumbs on top.
- Repeat with other piece of chicken.
- Add broccoli and red peppers to pan, drizzle olive oil and S&P.
- Add chicken in pan with veggies.
- Bake for 50-60 min (until internal temp reaches 165 degrees F).
- Enjoy this flavor punch chicken!
