Yummy local and fresh produce

We are at the peak of local, fresh Jersey produce. I love this time of year, which provides so many healthy and fresh options to cook, bake, or snack on. I am blessed to live on a farm that grows such a great variety of fruits and vegetables. Currently we are selling our homegrown produce at our market: Duffield's Farm Market:

  • Sweet white corn

This is my family's 50th anniversary of the farm being in business. We have been celebrating by having "special sales" for our customers. Selling produce for the cost it was 50 years ago, for example: .$.50/lb for tomato. It is awesome to see the loyal customers who have been shopping at our market since it started as "Mary's stand". We started with just a few items, for example taking peaches to Philadelphia auctions to make a living, to now growing and selling over 40 different fruits and vegetables.

This month's recipe redux theme is to incorporate fresh, local July produce into dishes. I am including a peach spritzer and a grilled chicken veggie dish.

Grilled chicken with veggie "spaghetti"
Serves: 1
Ingredients:
  • 4-6oz Grilled or baked chicken
  • 2 tsp olive oil
  • 1/4 lemon, juice
  • 1 tsp lemon pepper spice
  • 1 tsp minced onion
  • 1 garlic clove, minced
  • 1 ear of corn (Duffield's farm)
  • 5 grape tomatoes (Duffield's Farm)
  • 1 yellow summer squash (Duffield's Farm)
  • 1/4 avocado, cubed
Directions:
  1. Using a veggetti, create "spaghetti" from the summer squash.
  2. Remove corn from the ear and halve the grape tomatoes.
  3. Heat cast iron skillet on medium heat.
  4. Once hot, add olive oil and minced garlic. Let it cook for a minute.
  5. Add squash, lemon, and spices. Let it cook for 2-4 minutes.
  6. Add corn and tomatoes. Let it cook for 2-4 more minutes (I like my squash and tomatoes on the soft side, so cook to your liking) 
  7. Place on plate, add avocado and chicken.
  8. Enjoy the taste of July produce with a peach spritzer!
Peach spritzer

Ingredients
  • 6 oz white wine
  • 2 oz Peach-pear sparkling water (La Croix: no sugar, calories, sodium, etc!)
  • peach slices (Duffield's farm)
Directions
  1. Add wine to glass, top with sparkling water and peach slices.
  2. Enjoy by the pool or for a refreshing summer and low cal drink!
